PIZZA HUT PIZZA DOUGH

1 1/3 cup water
2 teaspoons sugar
1 1/4 teaspoons salt
2 tablespoons olive oil
2 tablespoons cornmeal
2 cups unbleached all purpose flour
1 cup bread flour
1 teaspoon baking powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
3/8 teaspoon MSG
1 1/2 teaspoons yeast
(You may use all-purpose flour only for this recipe)

Bread machine: Add ingredients to machine bread pan in order
given or as per
manufacturer's instructions. Set to 'dough' mode.

Food processor:
Place water, sugar, salt and olive oil in bowl of food processor
and pulse
to dissolve sugar and salt. Add yeast, bread flour, all purpose
flour other
dry ingredients. Process until a soft ball forms. Remove from
machine and
allow to rest, covered with a tea towel, about 45 minutes.

Dough hook:
Place water, sugar, salt and olive oil in bowl of mixer and
dissolve sugar
and salt. Stir in yeast, bread flour, all purpose flour, other
dry
ingredients and knead with dough hook to form a soft, but not-too
sticky
dough (about 8 minutes). Remove from machine and allow to rest,
covered with
a tea towel about 45 minutes.

By Hand:
In this case, use only all-purpose flour. Place water, sugar,
salt and olive
oil in bowl and dissolve sugar and salt. Stir in yeast, all purpose
flour,
other dry ingredients and knead to form a soft, but not-too sticky
dough
(about 8-l0 minutes). Allow to rest, covered with a tea towel about
45
minutes.

(*) For a breadier pizza dough - depending on taste and recipe
requirements,
you can add an additional 1/4 tsp. yeast.

Deflate dough very gently before using and allow it to rest a
further 15
minutes before using in a recipe. You may refrigerate dough in
an oiled
plastic bag for up to two days.

Kentucky Biscuits

1 1/2 cups flour
1 1/2 teaspoon salt
1 Tablespoon sugar
1 Tablespoon baking powder
2/3 cup milk
1/3 cup vegetable shortening


Preheat oven to 425ºF. Sift together flour,
salt, sugar and baking powder into mixing bowl.
Make a well in the flour mix and add the milk.
Add shortening and begin kneading with hands
(to cut in) the vegetable shortening and flour
in the milk until thoroughly mixed. Add milk,
if needed to form, and mix. Turn onto floured
board, and knead gently 6 to 8 times. Pat dough
to 1/2-inch thickness. Cut into biscuits. Place
on baking sheet and brown in oven 10-13 minutes.
Makes about 9 biscuits.

Take a big honkin' bite out of one of these and you'll soon know
why it's the Hard Rock Cafe's most popular sandwich. According
to the menu the pork is hickory smoked for 10 hours. But since
we're impatient hungry people here, we'll cut that cooking time
down to under 4 hours using a covered grill and carefully
arranged charcoal. Just sprinkle wet hickory chips over the hot
charcoal arranged around the inside edge of a grill (such as a
round Weber), and let the smoking begin. You can certainly use
an actual smoker if you've got one, and go the full 10 hours with
this puppy. But while you're still waiting for your sandwiches,
the rest of us will have already dragged our full, round bellies
over to the couch for a nap.
By the way, make your marinated cabbage a day ahead of time,
if you have the foresight.

Marinated Cabbage
2 tablespoons white vinegar
1 tablespoon granulated sugar
4 cups thinly-sliced cabbage

4 cups hickory smoking chips

Spice Rub
2 tablespoons kosher salt
2 teaspoons cracked black pepper
1 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon ground sage
1/2 teaspoon thyme
1/4 teaspoon cayenne

1 boneless pork loin roast (3 to 4 pounds)
vegetable oil

Sauce
2 15-ounce cans tomato puree
1 cup white vinegar
3/4 cup brown sugar
2 tablespoons vegetable oil
1/2 teaspoon onion powder
1/2 teaspoon liquid smoke (hickory)
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon coarse ground black pepper

8 Kaiser rolls

1. Make the marinated cabbage at least one day prior to building
your sandwiches. Like cole slaw, this garnish needs some time to
develop in the fridge. Combine the vinegar and sugar in a medium
bowl. Add the cabbage, stir, cover the bowl and store it in the
refrigerator until you are ready to make the sandwiches.
2. Put the wood chips in a bowl and cover with water. Let the wood
soak for at least 1 hour. Light the charcoal after it has been
arranged around the inside edge of your grill. You don't want coals
directly under your pork. When the coals are hot, drain the water
from the wood chips and sprinkle the chips over the top of the coals.
You should now have smoke.
3. Combine the spices for the rub in a small bowl and mix well.
4. Rub some vegetable oil over the surface of the pork roast.
Sprinkle the spices over the entire surface of the roast.
5. Place the roast in the center of your grill and put the lid on.
Let the pork cook for 3 to 4 hours or until the internal temperature
of the roast reaches 175 to 180 degrees.
6. As the pork cooks, make the sauce by combining the ingredients in
a medium saucepan over medium/low heat. Let the sauce simmer for 15
to 20 minutes, then cover and remove from heat. Set this aside until
your pork is ready.
7. When the pork is done, remove it from the grill and let it sit to
cool for 15 to 20 minutes or until you can handle it. Now you want
to tear the meat along the grain, making bite-size strips of shredded
pork.
8. Put the shredded pork into a large saucepan over medium heat. Add
2 cups of the sauce to the pan and stir. Keep the rest of the sauce
for later to serve on the side. Cook the pork for 15 minutes or until
it is heated through.
9. Grill the faces of the rolls and stack about 1 cup of pork onto
the bottom half of each roll. Add a rounded tablespoon of marinated
cabbage on top of the pork, add a tablespoon or so of extra sauce
on top of that, then cap off each sandwich with the top half of the
roll. Serve with clones for the Hard Rock's cole slaw and baked beans
on the side, if desired.
Makes 8 sandwiches.

It's one of Applebee's top-selling signature dishes
and a big request here on the site. This tasty dish
combines the tangy flavor of the tequila lime marinade
with creamy southwestern-style dressing, and tops it all
off with a melted cheese blend. Just be sure you don't
marinate the chicken longer than the 3 to 4 hours, or the
citric acid in the lime juice may toughen the chicken.
The bed of crispy corn tortilla strips can be easily
cloned with crumbled store-bought corn chips, but if
you want strips like those served at the restaurant,
just follow the "tidbits" below. Serve this dish with
your choice of rice (Spanish rice is recommended),
along with some pico de gallo (you can find a recipe here)
or salsa on the side.

1 cup water
1/3 cup teriyaki sauce

1/4 cup mayonnaise

1 teaspoon minced canned jalapeno slices (nacho slices)
1 teaspoon minced onion
1/4 teaspoon dried parsley
1/4 teaspoon Tabasco pepper sauce
1/8 teaspoon salt
1/8 teaspoon dried dill weed
1/8 teaspoon paprika
1/8 teaspoon cayenne pepper
1/8 teaspoon cumin
1/8 teaspoon chili powder
dash garlic powder
dash ground black pepper

1 cup shredded cheddar/monterey jack cheese blend
2 cups crumbled corn chips or fried tortilla strips (see tidbits)

1. Prepare marinade by combining marinade ingredients
in a medium bowl. Add the chicken to the bowl, cover and
chill for 2 to 3 hours.
2. Make the mexi-ranch dressing by combining all of the
ingredients in a medium bowl. Mix well until smooth, then
cover dressing and chill it until needed.
3. When you are ready to prepare the entree, preheat the
oven to high broil. Also, preheat your barbecue or indoor
grill to high heat. When the grill is hot cook the marinated
chicken breasts for 3 to 5 minutes per side, or until
they're done.
4. Arrange the cooked chicken in a baking pan. Spread a
layer of mexi-ranch dressing over each piece of chicken
(you'll have plenty left over), followed by 1/4 cup of
the shredded cheese blend. Broil the chicken for 2 to 3
minutes, or just until the cheese has melted.
5. Spread a bed of 1/2 cup of the tortilla strips or crumbled
corn chips on each of four plates. Slide a chicken breast onto
the chips on each plate and serve with your choice of rice,

Tidbits
Crumbling store-bought tortilla chips is the easy way to
make the bed of crunchy chips that the tequila lime chicken
rests on. But, you can make tortilla strips like those served
at the restaurant by cutting a stack of eight 6-inch corn
tortillas in half. Stack the halves on top of each other and
slice the tortillas into thin strips. Fry the tortilla strips
in 2 cups of oil preheated in a large skillet for 3-5 minutes
or until crispy. Salt lightly and cool on paper towels to drain.

Benihana Style Steak

¼ cup Uncooked rice
6 oz sirloin steak - boneless
1 tbsp Peanut oil
2 large Mushrooms - sliced
Salt
Pepper
Cook rice according to package directions. Set aside.

Heat griddle to 350°F and pour on oil to coat surface.
Sear steak on both sides. Cut steak into strips. Return to
griddle along with mushroom slices.

Turn meat pieces until done to preference. Season with salt
and pepper to taste. Serve with boiled rice and magic mustard sauce.

Makes 1 serving.

Crank up the rock 'n roll and throw all this good stuff into a
pot and enjoy this final secret recipe in our series of
mouth-watering soup clones. Bah-bye winter!

1 pound chicken breast fillets
1 pound chicken thigh fillets
vegetable oil
2 tablespoons butter
1 cup chopped onion
1/2 cup diced celery
4 cups chicken stock
2 cups water
1 cup sliced carrot
1 teaspoon salt
1/2 teaspoon cracked black pepper
1/2 teaspoon minced fresh parsley
2 cups egg noodles

Garnish
minced fresh parsley

1. Preheat oven to 375 degrees.
2. Rub a little vegetable oil over the surface of each piece of
chicken and arrange them on a baking sheet. Bake for 25 minutes.
Remove the chicken from the oven when it's done and set it aside
to cool.
3. Melt the butter in a large saucepan or dutch oven over medium
heat. Sauté the onion and celery in the saucepan for just 4 to 5
minutes. You don't want to brown the veggies.
4. Dice the chicken and add it to the pot along with the remaining
ingredients, except the noodles.
5. Bring the soup to a boil, reduce the heat and simmer for 30
minutes or until the carrots are soft.
6. Add the noodles and simmer for an additional 15 minutes, or
until the noodles are tender. Serve with a pinch of minced fresh
parsley sprinkled on top.
Makes 6 servings.

Here's a quick recipe for the dessert drink served at Hard Rock
Cafes all over the world. With only a few ingredients you can
make this one super-quick in the blender. Great on a hot day.
And it's easy to double or quadruple to serve more.

2 cups orange sherbet or sorbet
1 cup fresh squeezed orange juice
1/4 cup milk
1 sprig fresh spearmint

1. Put the sherbet, juice, and milk in a blender and blend for
15 seconds or just until the sherbet is smooth. You may have
to stop the blender and stir the sherbet up a bit to help it combine.
2. Pour the orange freeze into a tall, chilled glass. Place a
sprig of fresh spearmint in the top and serve immediately.
Serves 1 as a dessert or beverage.

If you like Big Macs, it's probably because of that tasty
"secret" spread that is plopped onto both decks of the world's
most popular double-decker hamburger. So what's so special
about this sauce? After all, it's basically just thousand island
dressing, right? Pretty much. But this sauce has a bit more sweet
pickle relish in it than a typical thousand island salad slather.
Also, I found that this clone comes close to the original with the
inclusion of French dressing. It's an important ingredient -
ketchup just won't do it. That, along with a sweet & sour flavor
that comes from vinegar and sugar, makes this sauce go well on
any of your home burger creations, whether they're Big Mac clones
or not. This is the closest "special sauce" clone you'll find
anywhere.

1/2 cup mayonnaise
2 tablespoons French dressing
4 teaspoons sweet pickle relish
1 tablespoon finely minced white onion
1 teaspoon white vinegar
1 teaspoon sugar
1/8 teaspoon salt

1. Combine all of the ingredients in a small bowl. Stir well.
2. Place sauce in a covered container and refrigerate for several
hours, or overnight, so that the flavors blend. Stir the sauce a
couple of times as it chills.
Makes about 3/4 cup.

If you love baked beans you'll go nuts over this clone recipe from
the world's first theme restaurant chain. It's real easy to make
too, since you just pour all of the ingredients into a covered
casserole dish, stir, and bake for an hour and a half. The only
element that may give you pause is the pulled pork from last week's
recipe. It's an effortless addition if you've got some of that
pork on hand. If not, just leave that ingredient out. Or you could
add some cooked bacon to the mix. Either way the beans will still
come out awesome as a nosh-worthy side dish or snack.

2 15-ounce cans pinto beans (with liquid)
2 tablespoons water
2 teaspoons cornstarch
1/2 cup ketchup
1/3 cup white vinegar
1/4 cup brown sugar
2 tablespoons diced onion
1 teaspoon prepared mustard
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon coarse ground black pepper
1/2 cup shredded pork (from last week's recipe)

1. Preheat oven to 350 degrees.
2. Pour entire contents of the can of pinto beans into a casserole
dish (with a lid).
3. Dissolve the cornstarch in a small bowl with the 2 tablespoons
of water. Add this solution to the beans and stir.
4. Add the remaining ingredients to the dish, stir well and cover.
5. Bake for 90 minutes or until the sauce thickens. Stir every 30
minutes. After removing the beans from the oven, let the beans
cool for 5 to 10 minutes before serving.
Serves 6 to 8 as a side dish.

8 Bacon slices - fried & crumbled
1 cup Yellow onions - diced
2/3 cups Flour
6 cups Chicken stock - hot
4 cups Potatoes - baked, diced & Peeled
2 cups Heavy cream
¼ cup Parsley - chopped
1½ tsp Granulated garlic
1½ tsp Salt
1½ tsp Red pepper sauce
1½ tsp Coarse black pepper
1 cup Cheddar cheese - grated
¼ cup Green onions - diced



Chop bacon; reserve. Cook onions in remaining drippings
over medium high heat until transparent, about 3 minutes.
Add flour, stirring to prevent lumps; cook for 3-5 minutes,
until mixture just begins to turn golden. Add chicken stock
grdually, whisking to prevent lumps until liquid thickens.
Reduce heat to simmer and add potatoes, cream, chopped bacon,
parsley, garlic, basil, salt, pepper sauce and plack pepper.
Simmer for 10 minutes; do not allow to boil. Add grated cheese
and green onions, heat until cheese melts smoothly. Garnish
each serving as desired with chopped bacon, grated cheese and
chopped parsley.

Makes 8 Servings.

Menu Description: "Six pot stickers filled with fresh ground turkey
meat
seasoned with ginger, water chestnuts, red pepper and green onions.
They are fried and served in a basket with spicy hoisin."

Here's a special recipe from one of the most popular theme
restaurant chains. Pot stickers are a popular Asian dumpling that
can be fried, steamed, or simmered in a broth. Planet Hollywood
has customized its version to make them crunchier than the traditional
dish, and it's a tasty twist that I'm sure you'll love. Since
hoisin sauce would be very difficult to make from scratch, you
can use a commercial brand found in most stores.

1/4 pound ground turkey
1/2 teaspoon minced fresh ginger
1 teaspoon minced green onion
1 teaspoon minced water chestnuts
1/2 teaspoon soy sauce
1/2 teaspoon ground black pepper
1/4 teaspoon crushed red pepper flakes (no seeds)
1/4 teaspoon salt
1/8 teaspoon garlic powder
1 egg, beaten
Vegetable oil for frying
12 wonton wrappers (3 x 3-inch size)

On the side
Hoisin sauce

1. In a small bowl, combine all the ingredients except the egg,
wrappers and oil. Add 1 tablespoon of the beaten egg. Save the
rest of the egg for later. Preheat oil in a deep fryer or a deep
saucepan to 375 degrees. Use enough oil to cover the pot stickers
-- 1 to 2 inches should be enough.
2. Invert a small bowl or glass with a 3-inch diameter on the center
of a wonton wrapper and cut around it to make a circle. Repeat for
the remaining wrappers.
3. Spoon 1/2 tablespoon of the turkey filling into the center of one
wrapper. Brush a little beaten egg around half of the edge of the
wrapper and fold the wrapper over the filling. Gather the wrapper as
you seal it so that it is crinkled around the edge. Repeat with the
remaining ingredients.
4. Deep-fry the pot stickers, six at a time in the hot oil for 3 to
5 minutes or until they are brown. Drain on a rack or paper towels.
Serve with hoisin sauce for dipping. If you want some crushed red
pepper or cayenne pepper to the sauce.
Serves 3 to 4 as an appetizer.

Tidbits

If you can't find wonton wrappers, you can also use eggroll wrappers
for this recipe. Eggroll wrappers are much bigger, so you will be
wasting more of the dough when you trim the wrappers to 3-inch
diameter circles. But in a pinch, this is a quick solution.
Pot sticker wrappers can also be found in some supermarkets, but
I've found the wonton wrappers and eggroll wrappers, when fried,
taste more like the restaurant version.

KFC Waffles

2 cups sifted flour
1/2 cup vegetable shortening
1 teaspoon salt
1 teaspoon baking powder
1 Tablespoon cornmeal
1 teaspoon baking soda
1 3/4 cups buttermilk
2 large eggs


Sift all dry ingredients together, then cut in the shortening
(as for pie crust). Add the buttermilk and unbeaten eggs,
mix until smooth. Preheat the waffle iron. Pour into lightly
greased waffle iron. Yield will vary depending on size of
waffle iron.

OREO COOKIES

Mix up cookies take small balls roll them in your
hands place in cookie sheet bake 350 for 10 to 15
minutes let cool and put in filling.

Yield: 6 servings

1/4 c Raw Rice-shaped pasta
3/4 c Minute rice
1 tb Pimiento; chop fine
1/2 ts Dry minced celery leaf
1 ts Dry minced parsley
1/4 ts Dry mustard
14 oz Can chicken broth
1/4 c Olive oil
1/2 ts Salt

In a 2-qt saucepan combine all ingredients. Stir often
and bring to a bol. Cover and remove from heat. Let
stand 15 minutes. Fluff rice with a fork occasionally.
Salt and pepper to taste if desired. Keep warm in top
of double boiler, over simmering water, to serve
within an hour. Refrigerate leftovers covered. Rewarm
Gently i 3 to 4 days. Do not freeze.

Yes, this actually exists. On an excursion through some New
England states I practically drove off the road when I first
saw a sign advertising lobster at this fast food chain. I just
had to get a closer look. That's when I discovered that this
unique sandwich is served only at select McDonald's locations,
mostly in Maine, for a limited time only during the summer months.
It's basically a lobster salad served on a hoagie roll with some
lettuce, but with fresh Maine lobster, is quite tasty.
Since you can't get this anywhere else, I figured this sandwich
was a prime candidate for kitchen cloning. Here's a recipe to
make a version of your own that has never before been published.

1\2 cup cooked Maine Lobster (fresh is best)
1\2 tablespoon mayonnaise
pinch salt
1 lettuce leaf
small hoagie roll

1. Mix together lobster, mayonnaise and salt.
2. Slice hoagie roll length wise, and spread the lettuce leaf on
the bottom half.
3. Spread lobster over lettuce. Top off sandwich with top half of
the roll.
Makes 1 sandwich.

Yield: 4 dozen

2 c Flour

1 c Butter; unsalted, softened
3/4 c Brown sugar
2 Eggs; lightly beaten
2 ts Vanilla
1 ts Almond extract
2 c Coconut; shredded
12 oz Chocolate chips
1 1/2 c Almonds; lightly salted
-dry roasted, finely chopped

Preheat the oven to 300. In a small bowl, whisk together the flour,
baking soda and salt. In a medium bowl, whisk together the flour,
baking soda and salt. In a medium bowl with an electric mixer, cream
the butter and sugars. Beat in the eggs, vanilla and almond extract.
Mix on low speed until blended. Add the flour mixture and mix just
until blended; do not overmix. add the coconut, chocolate chips, and
almonds and stir just until blended. Drop the dough by rounded tbsp
2" apart onto an ungreased cookie sheet. Bake for 18 to 20 minutes.

Serving Size : 4

Bahan :
Kacang Kenari (rajang)
8 btr telur ayam
650-800 gr gula pasir (sesuai selera)
500 gr tepung terigu
500 cc minyak goreng
100 gr coklat bubuk
½ sdt vanili

1 sdt soda kue


Cara Buat :
o Kocok (mixer) telur, gula, vanili & soda kue hingga tercampur rata
o Masukkan coklat bubuk
o Masukkan tepung terigu sedikit demi sedikit
o Masukkan minyak goreng sambil diaduk perlahan
o Tuang dalam cetakan yang telah disemir margarin
o Panggang dalam oven (45 menit – 1 jam)

1 klg cherry hitam, saring pisahkan airnya.

Cara membuat :
1. Campur terigu, coklat bubuk dan maizena, aduk rata.
2. Kocok telur, gula dan emulsifier hingga mengembang dan kental, masukkan campuran tepung sambil diayak, aduk hingga tercampur rata, masukkan mentega leleh aduk rata.
3. Tuang dalam loyang bulat garis tengah 20 cm, oven hingga matang, dinginkan.
4. Potong melintang menjadi tiga bagian, basahi dengan air cherry hitam.
5. Letakkan satu lapis cake, oles dengan butter cream, lalu atur belahan cherry hitam diatasnya, tumpuk diatasnya lapisan kedua oles dan beri cherry hitam lagi, tumpuk lagi lapisan teratas, rapikan.
6. Oles seluruh cake tadi dengan butter cream, hias dengan dark cooking chocolate serut hingga tertutup semua.
7. Semprotkan butter cream, hias dengan cherry merah.

Apple Pie

Bahan :
250 gr tepung terigu
250 gr mentega tawar
2 sdm air es
75 gr gula kastor

Bahan isi :
1 Kg apel, kupas, iris tipis, rendam dalam 3 sdm air jeruk nipis.
Campur :
200 gr gula kastor
1 sdt kayu manis bubuk
1/2 sdt garam
1/4 sdt pala bubuk
2 sdm tepung terigu

50 gr mentega beku potong kotak kecil.

olesan : 2 btr kuning telur.

Caranya :
- Uleni bahan kulit pie sebagaimana resep pie yg lalu (lihat Fruit Pie), lalu tipiskan, bagi menjadi 2 bagian.
- Pasang 1 lembar kulit pada loyang pie (bongkar pasang lbh baik), ukuran 24 cm, susun rapi sebagian apel lalu taburi dengan campuran gula rempah tadi, dan sebagian potongan mentega.
- lakukan hal yg sama sekali lagi hingga apel dan bahan taburan habis, tutup dengan 1 bagian kulit yg tersisa.
- buat lekukan atau pola hiasan sesuai selera, lalu oles bagian atas dengan kuning telur, panggang dalam oven 180'c, selama lk. 60 menit. atau hingga harum.

Special Tools:

Deep fryer
French Fry Cutter (or patience for cutting potatoes)

Ingredients:

2 large Idaho russett potatoes
1/4 cup sugar
2 Tablespoons corn syrup
1½-2 cups hot water
6 cups Crisco® shortening
1/4 cup beef lard (or save the fat from previously cooked burgers)
salt

Preparing your french fries:

Peel the potatoes. In a large mixing bowl, combine sugar, corn syrup, and hot water. Make sure the sugar is dissolved. Using a french fry slicer, cut the peeled potatoes into shoestrings. The potatoes should be 1/4" x 1/4" in thickness, and about 4" to 6" long. (You can do this with a knife, but it is alot of work)

Place the shoestringed potatoes into the bowl of sugar-water, and refrigerate. Let them soak about 30 minutes.

While they're soaking, pack the shortening into the deep fryer. Crank up the temperature to "full". The shortening has to pre-heat for a very long time. It will eventually liquify. After it has liquified and is at least 375°, drain the potatoes and dump them into the fryer. (be careful, it will be ferocious)

After 1 to 1½ minutes, remove the potatoes and place them on a paper towel lined plate. Let them cool 8 to 10 minutes in the refrigerator.

While they're cooling, add the lard or beef drippings to the hot Crisco®. Again, crank the temperature to full. Stir in the lard as it melts into the oil. It will blend in.

After the deep fryer is reheated to 375°-400°, add the potatoes and deep fry again. This time for 5-7 minutes until golden brown. Remove and place in a large bowl.

Sprinkle generously with salt, then "toss" the fries to mix the salt evenly. ( I suggest about 1 teaspoon of salt, maybe slightly more)

Serve hot, serve immediately, and enjoy! Depending upon the size of the potatoes, this recipe make about 2 medium sized fries.

Special Notes:

If you want more fries, double the recipe---but DON'T double the cooking oil. Just cook them in shifts, adding about 1/4 cup more Crisco® and 1 tablespoon lard for the second batch.

if cooking for a minute or so, removing, and returning the fries to the oil seems like a pain in the ass, that's because it is. But it is an important "blanching" step required for that great taste.

For an easier clone of McDonald's french fries, you can use the frozen, pre-cut Ore-Ida® shoestring potatoes. Just cook them in the same combo of Crisco® and lard, skipping the "blanching" process. Cook them while still frozen for 6-10 minutes (depending upon the amount) until golden brown. They're good, but not nearly as accurate in taste and texture as the fresh recipe.

Bahan:

150 gr daging ayam cincang halus (jangan menggunakan food procs!!)
150 gr daging ayam dipotong kotak
50 gr lemak ayam dipotong kecil-kecil (supaya tidak kasat)
100 gr terigu
2 butir telur ayam
2 sendok makan susu evaporated
6 buah plastik es mambo u. membungkus
tepung roti/panir kasar

Bumbu-bumbu:

1 sendok teh gula pasir
1 sendok teh garam halus
1 sendok teh kecap asin/ kikoman
¼ sendok teh merica bubuk
1 sendok teh ang ciu/sake
½ sendok teh penyedap rasa (optional)
2 sendok teh paprika bubuk (optional)
1 sendok makan maizena
½ sendok makan minyak wijen
2 sendok makan minyak ayam
1 butir telur ayam

Cara membuat:

1. Masukan daging ayam cincang dan daging ayam kotak aduk rata, tambahkan lemak dan bumbu-bumbu (kecuali maizena) aduk-aduk hingga rata, terakhir masukan maizena.
2. Masukan kedalam plastik, ikat ujungnya, tusuk-tusuk agar uap bisa keluar, kemudian kukus 20 menit. Dinginkan.
Keluarkan dari plastik, potong-potong serong.
3. Campur telur dan susu kocok asal lepas
4. Masukan potongan ayam ke dalam terigu kering, lalu celupkan ke dlm campuran telur susu, guling-gulingkan pada tepung panir
6. Goreng dengan minyak banyak dan api sedang sampai kuning

Membuat Cap-cay

Bahan-bahan yang diperlukan:

1 dada ayam dipotong kotak-kotak kecil
200 gr udang dikupas kulitnya
5 helai daun kol
5 bakso dipotong kecil atau dibelah dua
10 helai sawi caisim dipotong-potong
3 batang daun prei dipotong-potong
3 buah tomat dibelah empat
1 buah bawang bombay dibelah empat
2 buah wortel dipotong serong dan tipis

Bumbu-bumbu yang diperlukan:

3 siung bawang putih
4 sendok makan saus tomat
4 sendok makan tepung maizena
1 sendok teh garam atau sesuai selera
lada halus secukupnya
Bumbu penyedap sesuai selera

Cara membuat:

Tumis bawang putih hingga menguning dan berbau harum. Masukkan sekaligus ayam dan udang, aduk rata hingga setengah matang. Tambahkan air segelas. Sesudah mendidih masukkan wortel, bakso dan sayuran lainnya. Aduk terus sambil menambahkan saus tomat, garam, lada dan bumbu penyedap. Setelah rasanya sesuai selera, masukkan cairan tepung maizena. Segera angkat dari api selagi sayuran masih renyah.

Bahan:

300 gr Udang, kulit dan kepalanya dibersihkan
½ sdt garam halus
½ sdt merica bubuk
2 butir telur ayam, kocok lepas
150 gr tepung roti putih kasar
Tepung terigu secukupnya
Minyak goreng untuk menggoreng

Cara Membuat:
Campurkan Udang dengan merica, garam
dan tepung terigu. Lalu celupkan ke dalam
kocokan telur lalu gulingkan Udang tadi ke atas
tepung roti. Diamkan sekitar 10 menit.
Kemudian goreng dalam minyak panas sampai
berwarna kuning kecoklatan.Tiriskan.

Bahan untuk saus:

500 gram tomat merah
150 cc air
1 sdm margarine
3 butir bawang merah, iris tipis
2 siung bawang putih, iris tipis
3 cabe merah, iris tipis memanjang
4 cm jahe, iris tipis memanjang
10 batang lokio
1 sdt garam
1 sdm gula pasir
1 sdm cuka
1 sdm bumbu penyedap
4 sdm saus tomat botol
1 sdt tepung kanji, diaduk dengan sedikit air

Cara membuat saus:
Seduh tomat dengan air medidih lalu diamkan sampai kulit tomat menjadi lunak.
Hancurkan tomat lalu disaring dan buang ampasnya.
Campur air tomat dengan 150 cc air. Di dalam wajan panaskan margarine,
tumis bawang merah, bawang putih, cabe merah dan
jahe sampai harum lalu masukkan lokio dan air tomat.
Masukkan gula, cuka dan bumbu penyedap.
Tuangkan saus tomat dan masukkan cairan tepung kanji.
Masak sampai mendidih dan mengental lalu diangkat.
Hidangkan Udang goreng tepung dengan menuangkan saus ke atasnya.

Bahan yang diperlukan :

1 ayam dibersihkan dan dibelah dua
8 siung bawang merah
3 siung bawang putih
4 lembar daun salam
1 ibu jari lengkuas
air kelapa secukupnya
garam secukupnya

Cara membuatnya :

Masukkan ayam yang telah dibelah dua ke dalam wajan. Masukkan bawang merah, bawang putih, dan garam yang telah ditumbuk hingga halus.
Pukul Lengkuas sampai pecah-pecah dan masukkan bersma daun salam. Tambahkan air kelapa dan rebus dengan api besar, sebaiknya wajan ditutup. Jika telah mendidih kecilkan api dan tunggu hingga ayamnya empuk.
Jika sudah empuk, siapkan penggorengan dan goreng ayam dengan api besar.
